Spinach & mushroom in miso

I always try to find ways to get my boys to eat their greens. One of my go-to veggies is spinach. It’s packed with nutrients such as Vitamin A, Vitamin C, Vitamin K, iron, folate, and potassium. This spinach and mushroom dish has enough umami to get my picky boys to eat their greens (and browns)!


Prep Time: 10 mins

Cook Time: 10 mins

Serves: 4 servings


Ingredients:


1 bunch spinach

1 - 8oz package baby bella mushroom

3 tablespoons low sodium chicken broth

2 teaspoons miso paste

2 cloves of garlic

2 teaspoons olive oil



Instructions:

  1. In a nonstick skillet, infuse minced garlic in olive oil under low heat for 2 mins.

  2. Mix miso paste and low sodium chicken (or vegetable stock) in a bowl.

  3. Add washed, sliced baby bella mushrooms to the skillet. Cook under medium heat, uncovered, for 4 mins.

  4. Add miso and stock to mushrooms in the skillet.

  5. Add spinach to the skillet. Gently mix. Continue cooking for 3 mins, uncovered, under medium heat. Remove from heat and serve.
